The recipes at Slim Pickins' Pork (slimpickinspork.blogspot.com) are so mouth-watering, I wish the contributors, Andrew (from Columbus, Ohio) and Reil (from Minneapolis, Minnesota), would give more. They write about hearty foods, including gumbo, pierogies (above), empanadas, pizza and burgers. But, over two years of blogging, they've only given 11 recipes, for dishes such as stuffed and roasted pork belly; buttermilk-berry ice cream; poached salmon rillettes; caramel- ised onion and andouille pizza; and bananas Foster and Nutella crepes.

As you'll have guessed, their focus is on pork. The two bloggers post about sausage-making (varying the size of the die on the meat grinder can affect the texture and quality of the product), discuss cuts and the myriad ways to cook them, including smoking, braising, slow-cooking and confiting.
