It's always enjoyable to visit a new fine-dining restaurant that is tucked away in a commercial building rather than a fancy hotel, even if the chef and sommelier have exactly that sort of background, both having worked long term at Petrus at the Island Shangri-La. The decor at Amuse Bouche confirms the impression that the restaurant is trying to be something a little more personal - it's chic and elegant, but there is also something cosy and comfortable about it. The menu also shows individual flair - the regular dinner menu of four courses for HK$480 and five for HK$580 has only about 12 choices including dessert, but the dishes are carefully crafted and presented. There is also an eight-course degustation menu at HK$790 per person that gives a more thorough sense of the dishes available. Recommended dishes include the light coco bean soup with smoked bacon and black truffle (HK$90), pan-fried duck foie gras with roasted fig and jelly, and red vinaigrette reduction (HK$210) and crispy apple tart with vanilla ice cream (HK$70). The restaurant has a minimum charge of HK$350 per person for dinner. The exceptional, well-chosen and reasonably priced wine list should keep oenophiles more than happy.
