I'm a big fan of baking-supplies store Twins (1/F, 137 Johnston Road, Wan Chai, tel: 8111 3090), which carries a huge range of products at reasonable prices. It sells several brands of chocolate, including my favourite, Valrhona, in blocks (which need to be chopped before being melted) and feves (which are easier to use). The Valrhona comes in various cacao percentages but I prefer the one that is 85 per cent (HK$33 for 200 grams).
Cheesecloth is a rather prosaic item in the kitchen but it's vital for things such as draining ricotta or yogurt. Once, when I ran out of it, I tried using sterile medical gauze but it was too narrow and the weave too loose. Now, whenever I see cheesecloth, I stock up on it. I found some recently at Oliver's (Prince's Building, Central, tel: 2810 7710), where it sells for HK$22 a pack.
When I want a bowl of Pulmuone-brand mul naeng myun (Korean chilled beef soup noodles), I toss the packet of soup base in the freezer until it's icy (about 10 minutes). I put the cooked noodles in a bowl, add the soup base, a halved hard-boiled egg, some Korean hot mustard (included in the pack) and a splash of rice vinegar for a light cooling meal. The Pulmuone brand was recommended to me by a friend and it's now a staple in my fridge. It sells for HK$39 a pack (to serve two) from City'super (Times Square, Causeway Bay, tel: 2506 2888).
