There are plenty of reasons behind the success of the Aqua Restaurant Group during its first decade of operation, not least of which are the creative influences of its founders, its dedicated and professional staff, its outstanding cuisine and the unique environments it is served in.
But such success could never have been achieved without the city of Hong Kong.
It was with this in mind that founder David Yeo put together his plan to give something back to the city which helped him with his success and, in November last year, Hullett House in Tsim Sha Tsui was officially opened. Designed to bring to life old Hong Kong and celebrate the traditions of the city's rich and unique heritage and culture, the group's vision for Hullett House was, Yeo says, to be 'by Hong Kong, for Hong Kong - we give you old Hong Kong'.
Situated in the white-stucco building that was formerly the marine police headquarters on Canton Road in Tsim Sha Tsui, close to the Star Ferry concourse, the design-led heritage development consists of an intimate hotel, five restaurants and bars, and a souvenir store.
All of these are housed in one of the oldest buildings in the heart of the city. Dating back to 1881, it is a rare example of magnificent colonial architecture.
Each restaurant and hotel suite has been individually created to embody a period of history and highlight the importance of the city's cultural past. Hullett House is named after Richmond William Hullett, a 19th-century academic who discovered the bauhinia flower now made famous on Hong Kong's flags and coins.
