Its outdoor area, with inviting rattan lounges, provides a casual space to unwind. The drinks: Hush's molecular cocktails truly stand out. The Mr Grey (HK$110) is a refreshing martini made of crushed cucumber, apple juice, Earl Grey tea, gin and elderflower syrup with a dash of lemon and lime. The distinctive Earl Grey aroma can also be savoured in the long-lasting foam at the top of the drink and small, caviar-like pearls at the bottom. Signature drink the Hush Club (HK$90) consists of orange marmalade, Bacardi, Cointreau and orange juice topped with Earl Grey tea foam (English breakfast, anyone?). The marmalade, which provides the strongest flavour, is tangy but not too sweet. Those who aren't traditional margarita fans might be pleasantly surprised by the Charcoal Margarita (HK$100). The salty foam at the top hints of seawater, and the drink combines crushed grilled lemon, tequila and Cointreau with a dollop of honey. It's an unlikely mix, but makes for a pleasant drink that is not too sweet or harsh. The grilled lemon gives it a unique zing. Hush also has a range of spirits, other cocktails and a small range of beers (starting from HK$60) and wine by the glass (HK$75). The verdict: the bar's d?cor may not jump out at you, but its molecular cocktails offer a unique journey into taste and texture. Another plus is that a barbeque can be hired out along with the outdoor area for private functions. Members get discounted drinks, priority bookings and other privileges.
