The vibe: the Champagne Bar on a recent visit revealed again why it has long been a chosen venue for Hong Kong's sophisticates. A couple danced close to the cool jazz that was being played in one corner, local suits were leaning on the bar and chatting, and on one sofa sprawled a certain movie industry mogul and the latest object of his affection. These three worlds never even came even close to colliding all night. And that's the beauty of the place - it's in a most public of settings, but somehow feels very private.
The drinks: it's the fine wines that most people come for and, of course, the champagne list, which the staff will quietly confirm is unmatched across the city. Top of the range sees you settling back into a glass of Krug Grand Cuvee (HK$550), but no one will know if you opt instead for Perrier-Jouet Brut (HK$215). If you're feeling generous, then there's the Cuvee Dom Perignon 1995 double magnum - make it a bottle at HK$28,000. There are traditional cocktails: a meaner martini (HK$120) you won't find. But if you're of the nothing-ventured-nothing-gained sort, suggest and indulge in the French 75 - champagne's very own menage a trios with gin and lemon juice (HK$185). It's almost impossible not to be seduced.
The verdict: perfect for pre-dinner - or show - or for settling in for a long night. The problems of the world will be solved.
