RESTAURANT owners and managers were yesterday warned that sub-standard seawater in fish tanks could lead to prosecution.
They were also advised on how to keep the water clean and prevent a repeat of July's cholera outbreak.
At a seminar organised by the Urban and Regional councils in Lai Chi Kok yesterday, restaurant owners were shown a new type of filter system which can sterilise fish tank water, and they were given detailed briefings on acceptable hygiene standards and practices.
Extensive tests have been carried out on the new filter system which attaches to the tank's filter system and uses ultra-violet light to kill off any bacteria that may be in the water.
After going through the normal filter system, the water is run over a special ultra-violet light in a very thin layer which allows the ultra-violet rays to penetrate right through the water.
The head of environmental health training at the Urban Services Department Training School which carried out the tests, Kwan Ka-lun, said the system worked quite effectively.
