Angel's Share
2/F Amber Lodge, 23 Hollywood Rd. Tel: 2805 8388. Whisky  has always transcended all notions of class and the people behind Angel's Share have rightly put this lovely drop back in its rightful place, with more than 100 varieties on offer. Recommended: the 20-year-old Macallan.    
Aqua Spirit  
29-30/F, 1 Peking Road, Tsim Sha Tsui. Tel: 3427 2288. Too many turn their noses up at Kowloon, but there's one thing you need to come here for: an unmatched view of Hong Kong. Recommended: the signature 'Aquatini' is the icing on the cake while enjoying the famous view.
Baby Buddha
18 Wo On Lane, Central. Tel: 2167 7244. Its tucked-away alley location and cool, minimalist decor make this the perfect spot for a quiet drink before hitting SoHo or Lan Kwai Fong. Recommended: Around the World cocktail, a lethal combination of gin, Scotch, brandy, rum and vodka masked under fresh fruity flavours of orange, lemon and pineapple. 
The Blck Brd
6/F and roof garden, No 8 Lyndhurst Terrace, Central. Tel: 2545 8555. With no DJs, no cocktails and no televisions, this bar has a unique focus: top-quality booze. And it's all served up in an elegant, almost industrial environment. Recommended: the 14-year-old Oban whisky (HK$138 a shot), along with the Ardbeg and Glenmorangie (all HK$88 a shot).  
California Vintage
77 Wyndham St, Central. Tel: 2525 0808. This  Wyndham Street wine bar has partnered with more than  20 Californian wineries, offering more than 80 tipples from around the Golden State. Recommended: the pinot noir 2007 Fritz Reserve from Russian River (HK$140).  
The Chapel 
27 Yik Yam Street, Happy Valley. Tel: 2834 6565. Whether for a pre-race warm-up or post-win celebration, The Chapel's broad range of beers will satisfy anyone in Happy Valley. Recommended: the Chapel's curries  are  a great way to soak up the booze after  the races.  
The Chinnery Bar
1/F Mandarin Oriental, 5 Connaught Road, Central. Tel: 2825 4009. Everything about the bar spells sophistication, from the dark-wood decor to the silver-haired staff in perfectly tailored white dinner jackets. Recommended: the more than 100 different single-malt whiskys from around the globe. 
Club@28
28/F Crowne Plaza Hotel, 8 Leighton Road, Causeway Bay. Tel: 3980 3300. The vibe: this rooftop bar is sleek, stylish and far from understated. Inside it's bright and glitzy, with a circular bar and glass windows on either side, one of which leads to the venue's real gem - a wood-decked terrace. Recommended: the J-Cube cocktail, made with vodka and crushed strawberries. 
Fringe Club 
2 Lower Albert Rd, Central. Tel: 2521 7251. The ground-floor bar is a hip hangout for the city's arty crowd, regularly offering great live music, while the roof bar is a bit rough around the edges but offers a casual alternative for those wanting to enjoy the nighttime sky. Recommended: the evening tapas menu offering chorizo, Thai fish cakes and  braised wings.
The Globe 
Garley Building, 45-53 Graham Street, Central. Tel: 2543 1941. The Globe is a smart English pub, with one of the widest and best selections of beers in Hong Kong, as well as excellent pub fare. Recommended: Typhoon T8, which is brewed on Lantau Island.  
Habitat Lounge
29/F QRE Plaza, 202 Queen's Road East, Wan Chai. Tel: 2907 0888. Habitat Lounge tries (too) hard to please but can be a romantic spot for a date, if you like old-school hip hop and carp projected on to the floor.  Recommended: Richito (HK$70), made with light rum, lychee liqueur and Yakult.
 Hard Rock Cafe
LG/F LKF Tower, 55 D'Aguilar St, Lan Kwai Fong. Tel: 2111 3777. The Hard Rock Cafe's return to Hong Kong is music to the ears  of local rock fans.  Recommended: the Hurricane, with Bacardi Superior rum, Captain Morgan dark rum and Disaronno Amaretto plus grenadine, orange, mango  and pineapple juice. 
Hive 101
Shop A, 101/F International Commerce Centre, 1 Austin Road West, Kowloon. Tel: 2972 2666. Once found, this quiet bar with glorious views is a tranquil spot for conversation. Cocktails blend Canadian ice wines with Japanese spirits and plenty of fruit and the wine and shooters are pretty good too. Recommended: the blend of ice wine, Yoichi whisky, cranberry juice and lemon called a Maple Route.
Inn Side Out
Sunning Plaza, 10 Hysan Avenue,Causeway Bay. Tel: 2895 2900. The peanut husk-strewn floor and throngs of regulars make for a relaxed atmosphere in a crowded beer hall with an extensive outdoor seating area. Come for a wide range of great, relatively cheap beer and great drinking food to match. Recommended: Trappist Westmalle Tripel Belgian beer (HK$42).
Le Boudoir
B/F, 65 Wyndham St, Central Tel: 2530 3870. This atmospheric basement bar modelled on 19th-century Parisian salons is dark and lovely, with one of the best cocktail menus in town. Recommended: the Unconventional martini (HK$95), blending gin, lemon juice, mint and kaffir lime syrup.  
The Lawn Bar
1/F The Upper House, Pacific Place, 88 Queensway, Admiralty. Tel: 3968 1107. The large, swanky outdoor space with plenty of furniture to sprawl on offers a wide variety of wines to choose from and a few of master mixologist Sam Jeveons' innovative cocktails. Recommended: the Elderflower Collins, made with elderflower syrup, Tanqueray gin, fresh lime juice, fresh grapes and soda (HK$110).   
MO Bar 
G/F The Landmark Mandarin Oriental, 15 Queen's Road Central. Tel: 2132 0077. This fashionable hangout spread over two levels offers some impressive signature cocktails. Recommended: the Asian Mind MOtini, with premium gin, muddled ginger, pink grapefruit and fresh lime juice.   
The Pawn 
62 Johnston Road, Wan Chai. Tel: 2866 3444. Relax at the beautifully restored historic building with natural light, low leather couches and a beautifully calm atmosphere. Recommended: Leffe Brune.   
Sevva
25/F Prince's Building, 10 Chater Road, Central. Tel: 2537 1388. Indoor and (spacious) outdoor seating gives Sevva a nice edge, particularly given the incredible skyscraper views. Recommended: at Sevva it's the desserts which will steal your heart. 
Shore
3-4/F L Place, 139 Queen's Road Central. Tel: 2915 1638. Shore showcases an interesting dual-concept theme: upstairs is the Onshore fine-dining area, downstairs is the Offshore bar with a 1,800-sq-ft terrace that exudes warmth and originality. Recommended: put your choice in the hands of mixologists with the Surprise Me! (HK$90) cocktail.
Sky Lounge
18/F, Sheraton Hong Kong Hotel & Towers, 20 Nathan Road, Tsim Sha Tsui. Tel: 2369 1111. A welcome relief from the bustle below, the bar has a glamorous 1950s feel and is an elegant eyrie to recharge batteries. Recommended: the kiwi martini ((HK$95), a show-stopping blend of vodka, kiwi liqueur and kiwifruit syrup. 
Sugar 
32/F East Hotel, 29 Taikoo Shing Road. Tel: 3968 3968. One of the few bars in the area to have an outdoor terrace, the chic Sugar at the boutique East Hotel is a rare escape from the city's Central-Causeway Bay hip-zone. Daybeds allow you to relax in its lap of laziness, while its view takes in most of the city's skyline. Recommended: the music, with resident DJs Eric Byron and P. Grant spinning lounge, soul, electro and chill-out.
Tazmania Ballroom 
1/F LKF Tower, 33 Wyndham Street, Central. Tel: 2801 5009. The coolest, sleekest pool hall in Hong Kong, this lounge bar is straight out of Hoxton. Recommended: the 'F*** Me Up', a cocktail with a serious alcohol kick, including amaretto, Malibu and vodka.
Vida Rica
2/F Mandarin Oriental Macau, Avenida Dr Sun Yat Sen, Outer Harbour, Macau. Tel: (853) 8805 8928. A chic, sophisticated bar with views over the Macau Tower and Nam Van Lake, the bar serves manly cocktails designed by a New York mixologist and has great nooks and crannies to hide in. Recommended: the Lagavulin 25 years cask strength single malt whisky (HK$490 per shot).
