How to make an omelette
 Eggs are cheap, and are easy to prepare in lots of different ways. Here's a quick and simple recipe for you to try at home.
 Equipment you will need:
 small non-stick frying pan
 bowl
 fork
 spatula
 measuring cup
 Ingredients you will need:
 2 eggs
 1/4cup milk
 salt and pepper
 1 teaspoon oil
  Method:
 1 Crack the eggs into the bowl. Add the milk, some salt and pepper to the eggs, and beat with a fork until blended together.
 2 Heat the frying pan over a medium flame. Add the oil to the frying pan.
 3 Slowly pour the eggs and milk mixture into the frying pan.
 4 As the omelette starts to set, gently tilt the pan away from you. Allow the mixture to run to the edge of the pan.
 5 Once the omelette has set, use a spatula to loosen the edges around the pan, then fold the omelette in half.
 You can vary this recipe by adding different ingredients to the omelette before you fold it in half. For example, throw some grated cheese, chopped green and red peppers, chopped mushrooms, ham or onions on top. The choice is endless.
 How can you tell if your egg is fresh without cracking it?
 1 Fill a deep bowl or saucepan with water. 
 2 Slowly place the egg in the water. 
 3 If the egg is very fresh, it will lie flat on its side and sink to the very bottom of the bowl. This is because there is a small air pocket in the large end of the egg. As the egg starts to lose its freshness, it loses water and more air enters the egg. As a result, the air pocket gets larger. The larger the air pocket, the better the egg floats. 
 4 An egg that is a week old will float and stand upright. The smaller end will lie on the bottom of the bowl and the larger end, where the air pocket is, will point towards the top of the bowl. 
 5 A bad egg will float.
