Betty Crocker Pancake Mix  
Thanks to the addition of various oils and buttermilk, these pancakes were the fluffiest and lightest of the lot, with a velvety feel. They might disappoint those who like their stacks drenched in syrup, as the softness means it absorbs liquids and moisture very quickly, leaving spongy discs. While not as sugary as White Wings, it's still one of the sweetest I tried. The instructions were easy and only water is needed.

Coyote Original Pancake & Waffle Mix  
This large bag contains little  more than whole wheat flour and raising agent. You may want to  add  sugar to the mixture if you  plan to eat the pancakes with fruit  or the like, otherwise the wheat flavours can dominate. Eggs are optional; adding them makes the mixture lighter and more moist,  and it cooks into a fairly heavy, almost bread-like texture. This mixture is for those who love  hearty, wheat flavours.

Cherrybrook Kitchen Original Pancake Mix  
A dairy, nut and egg-free mixture, suitable for people with allergies. However, with just baking powder as it raising agent, the pancakes don't rise well, resulting in cakes that are too moist inside. The batter also burns quickly on the suggested medium to low heat. It works better on low. The instructions call for the addition of rice milk, but for those who can take dairy, regular milk produces a slightly thicker batter.

White Wings Original Shaker Pancakes  
 Just add water to the indicated level, replace the cap and shake the bottle vigorously, a task that children will love. However, you'll need to cook all of it at once, or very soon after mixing. The label says it can sit for three days refrigerated, but by the third day, the batter had solidified. The pancakes erred on the sweet side, and while the vegetable gum gives pliability, it seems to prevent the cakes from forming a crust.

Canterbury Naturals Old Fashioned Pancake & Waffle Mix  
This  'all-natural'  pancake mix contains  buttermilk and oil, which ensures a supple result, but it still retains weight and texture and won't become soggy with syrup. The method simply states the amount  of water for an entire box of mix, which makes about 20 pancakes,  so unless you have a brunch party  or a large, hungry family, you'll  need to scale it down yourself.
