Sparkling wines are essentially wines with bubbles from a secondary fermentation.

There is a diverse array of styles, from white, rose, red and dry to semi-sweet, non-vintage (NV) and vintage sparkling wines. There can also be a wide variance in pricing, with most non-vintage sparkling wine costing from HK$100 to HK$500. Pricing depends on the origin, grape variety, production method and marketing.

Harvest

Grapes for sparkling wine are normally harvested earlier than those for table wines. Producers are looking for high acidity as this gives the wine crispness and ageing ability.

First fermentation

The first step of the process is to make a base wine that is not yet sparkling.
