Hotel offers sumptuous menu featuring Alba white truffles
Autumn is the season for harvest, including the rare white truffles which are collected at its finest state during autumn in Alba. For this month, Aux Beaux Arts at MGM MACAU saves you a trip to hunt for the buried “White Diamonds”. Alba white truffles are delivered straight from the forests in northern Italy to your plate as the ultimate luxurious side dish to the sumptuous chef’s recommendations and the restaurant’s signature French dishes.
All dishes of the seasonal a-la-carte menu are specially prepared with two grams of freshly shaved Alba white truffles, beginning with a 60°C soft egg asparagus panna cotta, Langoustine, parmesan cheese and pata negra as appetiser. Another appetiser features Angus beef carpaccio with slow-cooked beef jelly accompanied by paper-thin slices of white truffles.
The soup is homemade Jerusalem artichoke velouté with nutty and taro-like taste that matches perfectly with pan-seared foie gras and white truffle shaves. The main courses are served with pumpkin gnocchi with crispy garlic, pork tongue, mizuna and comté cheese; and a French classic cuisine of pan fried veal sweetbread with chicken oyster, lobster, braised root vegetables and chicken cream jus. Both dishes are served with reduction sauces to produce rich flavours that enhance the intense musky, earthy aroma of white truffle.
