Chain eatery Dressed invites three chefs to whip a few light delights

All that Christmas feasting is not good for the waistline, but three chefs have dreamed up some festive salads that will not disappoint the taste buds in the absence of turkey and eggnog.

David Izquierdo of newly opened Spanish tapas bar Boqueria, Jason Black of The Shore and The Salted Pig, and Vivian Herijanto of Heirloom Eatery and Corner Kitchen were each invited by salad restaurant chain Dressed to create something special.

Izquierdo's "very light and tangy vegetarian meal" features fresh baby spinach, goat's cheese and a caramelised onion vinaigrette. Steak chef Black opted for a meatier dish, combining thick-cut bacon, sliced prawns, radicchio and lettuce in his salad.

Herijanto chose Black Forest ham, crumbled blue cheese, sliced green apples, croutons and baby spinach for her creation. She said she was inspired by a popular dish from her own restaurants.

"I created a ham and apple sandwich that was very well received. I thought it would be cool to deconstruct it into a salad because the elements in this salad complement each other deliciously. Ham and apples always make me think of the holidays, too," she said.

The salads are available at Dressed on a two-week rotation from December 3 to February 24.
