HK$21 each, Great Food Hall, LG1/F Two Pacific Place, Admiralty Valrhona Caraibe truffle This small, square truffle has an intense, sticky ganache packed with fruity flavours and a little acidity. It is deliciously rich, but the heavy texture can be off-putting after a couple of truffles. It would help if the ganache was a little airier. HK$180 per 100 grams (about HK$25 per piece), Great Food Hall, LG1/F Two Pacific Place, Admiralty Maison du Chocolat plain dark chocolate truffle The shell of this truffle is a little too hard and thick, but the airy, creamy texture of the centre is perfect. The flavours generally tick the right boxes - nuttiness, acidity and cocoa come together for a well-rounded flavour, although more intensity might be needed. HK$22 per piece, citywide Jean-Paul Hevin chocolate truffle The ganache is extremely smooth, creamy and fine. It is very smooth on the tongue. It has intense chocolate flavours, and is almost wine-like with dark red fruits, mellow acidity, and a nutty finish. The chocolate shell is just a little harder than the centre.
