Buy fresh scallops in the wet market and ask the vendor to clean them.
 
Ingredients
180 grams couscous
About 250ml boiling water
1 small garlic clove, minced
1 shallot, halved then thinly sliced
2 spring onions, thinly sliced
The finely grated zest of half a lemon
About 30ml fresh lemon juice
About 30ml extra-virgin olive oil
50 grams pine nuts, lightly toasted
Mint leaves, julienned
Fine sea salt 
For the scallops
8 fresh scallops, about 2.5cm in diameter
Sesame seeds
Olive oil, for pan frying

Put the couscous and garlic in a bowl, add about ½ tsp of salt and mix thoroughly with a fork.
Add the boiling water, stir briefly then cover tightly with clingfilm.
Leave for five minutes, then uncover and stir. If the couscous is too firm, mix in a little more boiling water and leave for a few minutes.
Rub the couscous between the palms of your hands to loosen the grains.
Add the shallot, spring onions, lemon zest and juice, and olive oil.
Combine then taste; add more salt, lemon juice and olive oil, if needed.


Dry the scallops with paper towels then season them with salt. Sprinkle sesame seeds over the scallops to coat them on all sides. Press firmly so the sesame seeds adhere.


Lightly oil a skillet over a medium-high flame. When the skillet is very hot, add the scallops and cook them on one side until seared then flip them over and sear the other side. Do not overcook; they take about five minutes (or less) in total.

 

Mix the pine nuts and mint leaves into the couscous then divide between four plates. Add the scallops then serve.
Serves four as an appetiser.
