Tosca welcomes Michelin-starred chef; Pierre Gagnaire serves Tribute to Hong Kong

Italian delicacies, a four-course oyster-tasting menu, and a sakura set lunch are among the culinary specials at Hong Kong restaurants in April

Tosca at the Ritz-Carlton in Tsim Sha Tsui welcomes Norbert Niederkofler, chef of the two-Michelin-star Restaurant St Hubertus in San Cassiano, Italy, from April 7-9. The chef’s dishes are available on a four-course set lunch (HK$680 plus 10 per cent) or six-course set dinner (HK$1,680 plus 10 per cent) and include selections such as char from Val Passiria with peas and horseradish; and beef fillet and celeriac cooked in hay and salt crust. Pierre Gagnaire will be at Pierre restaurant at the Mandarin Oriental from April 16-20, presenting his Tribute to Hong Kong tasting menus that incorporate local ingredients. The four-course (HK$988 plus 10 per cent) and six-course (HK$1,688 plus 10 per cent) tasting menus are available at lunch and dinner and include three preparations of oysters (with granita of shallot sauce, red tuna tartare with nashi; cooked with brown butter, sauce violine, cauliflower with broccoli couscous and grilled lard; and poached in onion and kumbawa infusion with haddock and potatoes); razor clams and scallops with seaweed mariniere, and black rice and Chinese sausage cooked in clay pot. On March 30, Nanhai No 1 in Tsim Sha Tsui is having a blind wine tasting dinner featuring bottles from Piedmont, Italy paired with dishes such as warm smoked chicken salad with sauteed chicken liver in vinegar; minced Iberico black pork in lettuce wrap; and braised beef with sauteed mushrooms in XO sauce. Wines of South Africa will have a wine festival on April 11 at the Hotel Icon in Tsim Sha Tsui. Guests can taste from more than 120 South African wines, and South African food is also available. Sagano restaurant at the New World Millennium in Tsim Sha Tsui is serving a sakura set lunch until the end of April. The lunch is served Monday to Friday and costs HK$340 plus 10 per cent. It includes appetisers such as grilled silver cod with miso paste and Zuwai crab meat in vinegar sauce; as well as assorted sashimi and tempura, and desserts of sakura pudding and sakura ice cream.
