What’s on Hong Kong menus this month: white asparagus

Roasted with herbs, poached with hollandaise sauce and Parma ham, or as a pizza topping, these seasonal spears of delight feature prominently on special menus at several city restaurants

Several restaurants around town are featuring seasonal white asparagus on their menus. At Hugo’s at the Hyatt Regency in Tsim Sha Tsui, the white asparagus dishes are available until the end of June. They include steamed white asparagus with hollandaise sauce; white asparagus salad with langoustines, cauliflower, fennel and black truffle vinaigrette; and roasted white asparagus with herbs, sautéed Atlantic monkfish and Ratte potato in meunière sauce. At Cucina in the Marco Polo Hongkong hotel in Tsim Sha Tsui, white asparagus is on the menu until June 9. The dishes include poached white asparagus with hollandaise sauce and Parma ham; raw asparagus salad with avocado, crab meat, lemon dressing and caviar; risotto with white asparagus, mascarpone cheese and red prawn tartare; and lobster ravioli with white asparagus and fresh cherry tomato sauce. Le Port Parfume in Central is serving white asparagus dishes until June 16. Guests can taste escargot with grilled white asparagus and herb-Pastis butter; white asparagus with Bayonne ham, 63-degree egg and béarnaise sauce; and grilled white asparagus risotto. Bookings: 2824 3898

At Cafe Deco on the Peak, white asparagus dishes are available à la carte or on a three-course menu (HK$438 plus 10 per cent) until mid-June. Berliner in Discovery Bay has white asparagus on the menu until the end of May. The selection includes thin crust pizza with white asparagus, scallops, sun-dried tomatoes and béarnaise sauce; pan-seared foie gras with white asparagus; poached white asparagus with air-dried Black Forest ham and hollandaise sauce; and ricotta cheese tortellini with white asparagus and porcini mushrooms.
