Filipino cuisine is wonderfully complex, not just because of the regional differences within the country, but also due to the influences from Spanish, Chinese, American and various other cultures who (often forcibly) settled in the archipelago. Here are a few Filipino recipes to put on your table.

Pancit

Pancit started off as a Chinese dish of stir-fried rice noodles, but gets its unique taste from the liberal use of sour ingredients – white vinegar and calamansi – which are so beloved in the Philippines.
