Michelin stars for six-month-old Louise at PMQ, a first star for Petrus, where new executive chef Uwe Opocensky unveiled his first menus in November, and a third star for Forum and Sushi Shikon – these were among the highlights at the unveiling on Tuesday of the 2020 Michelin Guide Hong Kong and Macau. Another newcomer, Asian super chef Andre Chiang’s restaurant Sichuan Moon, which opened at the Wynn Palace casino in Macau in March, was awarded two stars, as was French restaurant Arbor in Central, Hong Kong. Run, a Chinese restaurant at the St Regis Hong Kong hotel, and French haute cuisine restaurant Gaddi’s at The Peninsula Hong Kong, were each awarded one Michelin star. Another newcomer at St Regis, L’Envol, also earned one star, and Roganic, which opened in Hong Kong earlier this year, was awarded a Michelin star too. The guide, in its 12th edition, awarded three stars to 10 restaurants in Hong Kong and Macau, two stars to 19 restaurants and one star to 61 restaurants. Speaking at its unveiling at the Grand Hyatt Macau, Gwendal Poullennec, director of the Michelin guides, said Michelin inspectors were impressed by the quality of the restaurants in both cities this year. “There is no doubt Hong Kong and Macau are homes of many culinary talents,” Poullenec said. Opocensky, who closed his Restaurant Uwe to take over at Petrus , said he was “super excited” about earning a first star at Petrus, at the Island Shangri-La hotel in Admiralty, so soon. “It’s amazing. Getting a Michelin star was always part of the game. I never thought it would be this early,” he said. “After I left Restaurant Uwe, I communicated with [Michelin] that I was leaving and they came to Petrus.” Chinese restaurant Fook Lam Moon in Wan Chai regained its Michelin star, and owner Janet Chui was thrilled by the result. “Thanks to the whole kitchen, the whole team. The past six months have been difficult, as customers don’t feel like dining out much, but the chefs have continued to work hard,” Chui said. She was also celebrating because the group’s restaurant Guo Fu Lou in The Murray in Central retained its Michelin star. There were high hopes that VEA Restaurant & Lounge, the French-Chinese restaurant in Central where Vicky Cheng is chef, would gain another Michelin star, but this year was not to be. “It takes time. There are certain things we will revisit and adjust, but we are happy to retain the star and will celebrate this, and then do it again next year,” Cheng said. Chiang, culinary director at Sichuan Moon , was thrilled the fine-dining Chinese restaurant received two stars. “It’s fantastic. I”m very proud of the team. For a Sichuan restaurant to be a two-star restaurant is fantastic. My aim was to push Sichuan cuisine to another level and get international recognition,” he said. Louise executive chef Franckelie Laloum said he hadn’t yet been able to tell chef-owner Julien Royer about it being awarded a star, as he was flying back to Singapore from Germany on Tuesday. Royer’s restaurant Odette in Singapore earned a third Michelin star this year and was named No.1 on the Asia’s 50 Best Restaurants list. “It’s very nice, I’m so happy for the team,” says Laloum. “We didn’t open the restaurant for a star, we just wanted to have a full restaurant. But this is a great reward for the team. I’m sure Julien will be very happy.” Finnish chef de cuisine Eric Raty said he was still trying to process the awarding of two stars for his restaurant, Arbor. “I’m so surprised. For the team it’s very good. Now we have to push to the next level, this will need time,” he says. Simon Rogan, chef-owner of modern British restaurant Roganic, which opened in February, was on hand to receive news of its first Michelin star. “I’m very happy for the team, they worked very hard. It’s nice to be part of the Hong Kong food scene, which is an amazing food scene. Watching the ceremony, it’s nice to put a face to a name.” For Olivier Elzer, culinary director at L’Envol, a fine-dining French restaurant in the St Regis Hong Kong, “getting the star is part of the process”. He said: “I have worked for Pierre Gagnaire and Joel Robuchon, and then with Seasons [in Causeway Bay, Hong Kong] I wanted to do more casual, but then it closed. “I’m happy to restart in fine dining again and we have only opened for eight months and have a star. For my team this is perfect. We can push harder for next year.” Amber at the Landmark Mandarin hotel in Hong Kong retained its two-star rating following extensive renovation of the restaurant and the launch of culinary director Richard Ekkebus’ innovative new menu that completely cuts out dairy products. Tosca at the Ritz-Carlton Hong Kong, headed by chef Angelo Agliano, was rebranded as Tosca di Angelo in March, and kept its one-star rating. The most notable drop was “demon chef” Alvin Leung’s Bo Innovation, which lost one of its three Michelin stars.
