Cafe Gray Deluxe to close in Admiralty, heralding ‘new chapter’ in innovative dining, Swire Hotels says

If you are a fan of Cafe Gray Deluxe or keep meaning to sample its modern European fare but haven’t got around to it, you are running out of time to dine there – the restaurant at The Upper House in Hong Kong’s Admiralty district will close at the end of this year.
A new concept will open in its place in the spring of 2021, Swire Hotels have announced, and promises to “mark a new chapter” in innovative dining.
The closure of the restaurant, on the 49th floor of the hotel, will come nine months after the death of the man after whom it was named and who created its menu, chef Gray Kunz, at the age of 65.

From now until December 31, Cafe Gray Deluxe presents a special menu featuring Kunz’s signature dishes, such as tarragon-scented lobster bisque, braised short rib of beef, and chilled soup of chrysanthemum and pear.
