Young Singapore chefs give its street food culture a shot in the arm 

  • Singapore’s street food is famous, but few people want to work in the trade, with its long hours and low pay, and many hawkers are nearing retirement 
  • A growing number of young chefs are taking up apprenticeships with food hawkers. ‘Local dishes would disappear if young chefs did not take over,’ one says,
