Michelin Guide Taiwan 2025 full list: 8 new 1-star restaurants, 3 new 2-star restaurants

At the Michelin Guide Taiwan 2025 official unveiling ceremony in Taipei on August 19, eight restaurants received their first star while three were elevated from one- to two-star status. Now in its eighth edition, the Taiwan guide has expanded its coverage for the first time to encompass New Taipei City and Hsinchu. “This is a testament to Taiwan’s openness and confidence in embracing both tradition and innovation,” said Gwendal Poullennec, the international director of the Michelin Guide. The three restaurants to earn a second Michelin star this year were Restaurant A, Eika and Yu Kapo. Among the new one-Michelin-star restaurants this year was Hosu, in Taipei. The eco-friendly restaurant stood out for also retaining its Michelin Green Star – which it was first awarded in 2023 – and because its sommelier Yia Yia Chen received the Sommelier Award for her focus on Taiwanese and eco-conscious wines. Hosu’s overjoyed chef and founder, Ian Lee, was moved to tears on stage. “My hands and my entire body were shaking,” he said. “This recognition belongs to my team members, my family, and every farmer and producer who nurtures this land. Without our land, Hosu could never exist.” Hosu opened in 2021 as a homestyle restaurant before reopening in 2024 at its current location in Taipei’s Da’an district with a menu inspired by traditional Taiwanese bando banquets. It sources around 95 per cent of its ingredients locally, from shrimp to fish sauce. Dishes primarily feature local delicacies from the mountains and sea, integrating the cultures of different Taiwanese ethnic groups. The menu, which varies according to the seasons, currently features a cold appetiser with Taiwan millet and a trout dish with ailanthus prickly ash and fungus. Another highlight of the ceremony was when Taipei’s Restaurant A – opened by chef Alain Huang in 2023 – was awarded its second star a year after gaining its first. Huang was previously the head chef of André Chiang’s Raw, which closed at the end of 2024. Huang brought photos of his team on stage as a show of appreciation. “Don’t think too much [about the result], just do it!” he said. Restaurant A’s menu features more than 10 courses that are rooted in French culinary tradition while incorporating elements from Asian cuisines. The dishes are prepared using premium ingredients such as king prawn, scallop and veal. The restaurant recently announced its plan to introduce a new autumn menu on September 9. The list of three-Michelin-star restaurants remains unchanged from the 2024 edition, with Tairroir, JL Studio, and Le Palais retaining their stars. As for Green Star restaurants, Embers, Hosu, Little Tree Food (Da’an Road), Mountain and Sea House, Yangming Spring (Shilin), and Thomas Chien have retained their status, with Tu Pang added to the list. Currently, Taiwan has a total of 43 restaurants with one Michelin star, seven with two, and three with three. The Young Chef Award went to Yung Yen Hsia from Yung Yen, while the Service Award was presented to Kiky Chen of The Front House. Both restaurants are based in Kaohsiung.
