Light Chinese soups can be easy to make and comforting and those that require a stock base are much better when made with the home-made variety. The easiest way to make a flavourful home-made stock is to strip most of the meat from a roast chicken (use the meat for other recipes) then simmer the carcass with water until the bones are very soft. Strain the liquid through a colander and discard the bones.

450 grams young bak choi (about 4cm long), soaked in salted water for about 10 minutes, then drained
90 grams green Chinese chives, minced
250 grams minced pork
150 grams peeled fresh shrimp, diced
2-3 3mm-thick slices fresh ginger, peeled and finely minced
