Wong is the mastermind behind the JIA boutique hotels, as well as 22 Ships, Chachawan and 208 Duecento Otto.

(9 Star Street, Wan Chai, tel: 2563 3444) is one of a few restaurants I feel is underrated. The food is surprisingly simple but still has layers and textures.

In the Western district, I love visiting (18 Tai Ping Shan Road, Sheung Wan, tel: 2858 9185) where the menu has 15 types of tea, always well-brewed. The home-made cake selection is small and the seating area is even smaller! It is passion which drives this place.

Crossing the harbour, I have to include this classic, (47-49 Parkes Street, Jordan, tel: 2730 1356). The way they manage the tables is amazing. Whatever you order, the food will come out in less than 60 seconds and it is fresh, hot and perfect. Just go there and eat your favourite egg sandwich - fluffy, tasty and soft.

(5/F Harbourfront Landmark, 11 Wan Hoi Street, Hung Hom, tel: 3746 2722) is one of the best sushi places in Hong Kong. The chefs order from Japan every day at 3am. It is a treasure at reasonable prices considering how fresh and well-prepared the sushi is.

In North Point, I love visiting (Ngan Fai Building, 84-94 Wharf Road, North Point, tel: 2570 1108). Often, when you eat Chiu Chow food it can be overcooked - but the goose here is always perfect and good quality in a neighbourhood feel.

As the seasons change, it is time for hot pot. At (5/F Lucky Centre, 165-171 Wan Chai Road, Wan Chai, tel: 2866 8305) there is a selection of more than 30 beef options and surprising dishes, such as the mui choi kau yuk balls [preserved mustard greens and pork belly] and cheese geoduck balls.
