Sweet pumpkin soup with purple glutinous rice at One Harbour Road.

Pearl Kong Chen, Cantonese food authority and author of several Chinese cookbooks, has two set menus that will be served at One Harbour Road at the Grand Hyatt in Wan Chai until July 27. The first (HK$688 plus 10 per cent at lunch and HK$838 at dinner) includes supreme scholar's deep-fried custard; stir-fried grouper fillet with night-fragrant buds, pine nuts and bell peppers; and sweet pumpkin soup with purple glutinous rice (above). The second (HK$738 plus 10 per cent at lunch and HK$868 at dinner) has braised sea cucumber with black mushrooms; minced partridge broth with chrysanthemum, bamboo shoots and fungi; and sweet almond broth with egg whites. The Regal Hotel group has tiger grouper at their Chinese restaurants until July 18. Dishes, a la carte or on a set menu (HK$2,088 plus 10 per cent for four) include double-boiled tiger grouper soup; braised tiger grouper with medlars and shirataki; fried crisp tiger grouper fillet with pomelo and basil (above); and stir-fried tiger grouper fillet with fried conpoy. Peruvian Maria Rosa Vasquez Chavez will be cooking at The Market restaurant at the Hotel Icon in Tsim Sha Tsui until July 13. The dishes on the lunch and dinner buffet include ceviche; quinoa salad; passion fruit and quinoa parfait (right); and Peruvian doughnuts.
