Price: about HK$165 without drinks. There's no service charge.

Ambience: it's a casual place with long, communal tables and bench seating. Order at the counter and the staff bring the food to you.
Recommended dishes: the dry-aged Angus burger with bacon and cheddar (HK$120) was excellent. The beef patty was cooked to the requested medium-rare, so it was moist, and the soft, bap-type roll absorbed the meaty juices. Butcher's Reuben (HK$135) — corned beef with cheddar, sauerkraut and "spread" — was also very good, with the thinly sliced meat piled onto rye bread studded with caraway seeds. The sauerkraut should have been more sour, though. The duck fat fries served with the sandwiches were fantastic.
Pros: if it were easier to get to, we'd be regulars, because we like the sandwiches, burgers and casual vibe.

Cons: we tried both versions of poutine, which had duck fat fries and home-style gravy and aged cheddar — the piggy (with sausage and bacon) and the deli (with pastrami) — both at HK$70 for small and HK$100 for large. They didn't have enough cheese, the gravy wasn't thick or flavourful enough, and it didn't coat the fries well. We ordered NY-style corned beef sandwich (HK$120) and classic pastrami (HK$120), and all four of us suspected we'd actually been served two corned beef sandwiches.
What else? The Deli is part of the Butchers Club group.
