Aqua offers magnificent views and delightful truffle dishes and drinks

The three-course truffle dinner for one plus a glass of wine or the special truffle cocktail is about HK$1,500.

A date or a business contact you want to impress.

The use of Abruzzo white truffle was carefully considered for the menu - shaving portions were generous but didn't overwhelm each dish. The starter salad was well-balanced and included black caviar, which served as the perfect foil for the creamy marinated egg yolk shavings and demi-sel butter, topped with two grams of truffle. Dessert is pear in mulled wine in hazelnut cream, white chocolate and one gram of white truffle. Although the standing whole pear wasn't easy to cut into and its dark brown hue wasn't particularly visually pleasing, the harmonious flavours proved once again that creamy white truffle and fresh, subtle pear make a perfect pair.

Although delicious and beautifully presented, the main course lacked focus. It would have been more satisfying a dish if the tender scallops, the melt-in-your-mouth sweetbreads or the tortelli in consommé (about two to three of each) were chosen to be the focus.

Aqua has an impressive wine list, but for this dinner, we highly recommend the specially created Abruzzo White Truffle Butter Cocktail. The light cocktail includes vodka that has been infused with the truffle for at least 12 hours before serving, and goes perfectly with the lemon juice, frothy egg white and pear slices.
