Pierre Gagnaire’s six-course tasting menu flourishes at the Mandarin Oriental, Hong Kong hotel

TURN-ONS The menu started off with a bang, with the infusion of blue fish, glazed red tuna, razor clams with special oyster, iodine ice cream, and zucchini seasoned with shiso. Light and delicate, it was perfectly paired with a Loire Valley 2016 Sancerre Clos du Roy Pascal Jolivet, which gently balanced the dish. The seafood complemented each other to perfection and was one of our favourite courses. The second course comprised grilled gambero rosso, marinated in Amontillado sherry, pan-seared chanterelle mushroom and Parmesan ravioli. Though slightly salty for my taste, my companion, who is usually a fussy eater, picked this one as his favourite course. The pan-seared julienne of sole, imported from Brittany, in a Champagne sauce was also spot on. We noted slight hints of whisky in the dish. A green olive-stuffed lettuce wrap followed, and creatively resembled Brussels sprouts. The roasted oregano leg of lamb followed on a bed of ratatouille. The greens on top complemented the dish superbly. TURN-OFFS None. DRINKS Pierre has an extensive drinks list, from wines to cocktails and bespoke handcrafted spirits. The different wines that were paired with their Tasting Menu were all well-matched.
