How to make Finnish mulled wine, by Jaakko Sorsa, FINDS executive chef

Heat red wine to a maximum of 74 degrees. Any higher and the alcohol will evaporate. Add black currants for the natural berry sweetness. Put in spices such as fresh ginger, star anise, cinnamon, cardamom, cloves, orange and lemon peel, according to personal taste. Serve with toasted almonds and raisins and add a shot of vodka into your glogg if you’re Finnish or alcoholic.

Ingredients
42 below manuka honey 1 oz
ginger liqueur 1 oz
lemongrass 1⁄2 stick
lime 1⁄4 of a lime
cranberry juice 1.5 oz
red wine 1.5 oz
cinnamon Sprinkle

Preparation
Muddle the lemongrass and lime to extract the flavor and juice. Add the vodka, ginger liqueur, cranberry juice and shake well. Pour in a tall glass over the red wine and sprinkle with fresh cinnamon.
