Spinning Salad at Marriott Café
You know how salad’s nasty when warm and wilted? Worry not, as this hotel salad bar tosses your choice of boutique greens and toppings in a metallic bowl with ice cubes on the bottom, guaranteeing crisp, chilled leaves. And the spinning is kind of sexy too.

Tot'orimuk at Go Koong
A delicious Korean classic—relatively bland and brown acorn jelly (but it’s oh so good for your health!) is mixed with fresh greens and dressed excitingly in red chili powder, garlic, scallions, sesame oil, and topped with smoky toasted seaweed.

Gourmet Salad at Whisk
The crème de la crème of the salad world is a lush mix of artichoke, mango, roasted red capsicum on mesclun, topped with aged Parmigiano and truffle oil. Whisk is going in a whole different direction with its new chef de cuisine—modern French with an Asian twist, very “art”—so go for this heavenly salad as it might disappear from their menu soon.

Fennel Poached Salmon at Dressed
Some prefer their big leafy greens intact, but here at Dressed, it’s usually all chopped up for a bite full of different textures and tastes. We love their fennel-poached salmon—an unctuous melt-in-mouth fish on mesclun, mandarin orange, chunky bacon bits, thinly shaved fennel and white balsamic vinaigrette.

Baby Leaf Salad at The Parlour
Crispy bean sprouts and
edible flowers make up this exquisite salad. The burst of bright orange from the blossoms jazzes up the presentation, but the taste is very clean, subtle and delicate.

Malantou at Din Tai Fung
“Shanghainese tabbouleh” made from malantou (Chinese aster), a wild spring herb that is chalky and smoky, with a flavor that is reminiscent of fennel and mint (would go well with gin). Mixed with finely chopped firm bean curd.
