For the best interpretation of serradura, ever: LIS Bar & Café (P3, L’hotel, 55 Wong Chuk Hang Rd., Island South, 3968-8888). For the uninitiated, serradura (literally, “sawdust” in Portuguese) is the best dessert Macau has to offer, egg tarts notwithstanding.
This pudding-like item is made of cream, condensed milk and very fine cookie crumbs (that look like sawdust, natch)—and can be a hit or miss, to be honest. But I think I’ve very well found the best serradura this side of Macau, in the form of Executive Chef Sidney Chan’s perfectly round sphere of heaven, served on a ceramic spoon.
It’s a deceivingly light treat, just sweet enough to put you over the edge, and it carries an addictive aroma that’s reminiscent of baby formula.
Besides this very special treat, LIS also serves a very popular a la carte lunch and buffet dinner. Like Metropark’s Le Chef, Lis offers a mix of western and Asian dishes, so you’ll be able to get Hainan chicken rice (sublime) as well as rich and fragrant bouillabaisse or even oven-baked cod with miso and mirin. Lis also has a specially prepared, Mediterranean-inspired fall/winter menu with dishes like coq au vin de Bourgogne and mussel fricassee.
