With the focus on seasonal bounty, Sessyu will also be offering M9 wagyu from Australia, taraba crab from Russia and jet-fresh Boston lobster, along with the flavor of the moment: Hida beef. Compared to its oilier contemporary, the Kobe, Hida beef is more tender and nutritious, with less fat and a stronger beef flavour.

The Hida beef will be in an array of dishes, from spring rolls to beef sirloin. Most of the dishes will be cooked quickly on a hot iron plate by Swiss-trained chef Matsumara Sen.
