All American Apple Pie Recipe
Ingredients for sweet butter dough:
3 cups of all-purpose flour
2 tablespoons sugar
1/2 teaspoon salt
10 tablespoons cold unsalted butter
6 tablespoons shortening
1/2 cup of ice cold water
What you will need to make your apple filling:
6 apples (at least 3 granny apples and a variation of red and green)
3/4 cup of sugar
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
3 tablespoons of all-purpose flour
 


Method:
Preheat your oven to 190 degrees celcius.
1. To make your dough, mix the flour, sugar and salt in a medium sized mixing bowl. Add the butter and shortening into the mixture. Using a pastry cutter or two knives, cut the butter/shortening mixture into the flour combining them into pea sized shapes.
 
2. Add two - three tablespoons of water and gather up the mixture using your hands to form small clumps. Continue adding a little water until the mixture gathers into a ball, BUT, be very careful not to add to much water. Divide the dough into two pieces one being larger for the bottom and the smaller one for the top crust. Flatten into disc’s, wrap in plastic wrap and chill in the refrigerator for at least 30 minutes.
 
3. Peel and chop your apples into small bite sized shapes. Add the sugar, flour and spices and mix thoroughly covering all the apples as equally as possible. 
 
4. Roll out your bottom dough. You should try to roll it as thin as possible, aim for two to three milimeters thick. Then place your dough in your pie dish carefully and then proceed to fill the dough with the apple filling. 
 
5. Roll out your bottom dough to the same thickness and carefully place on top of the dish covering all the apples. 
 
6. Cut off any excess edges of dough. Then roll your dough under and crimp the edges to make it look neat and finished. 
 
7. Using a knife, cut air holes into the top of the pie. For a finishing touch, brush a mixture of butter and cream over the top of the pie and finally sprinkly with cane sugar.
 
8. Bake the pie in two steps:
First step: 15 minutes at 190 degrees celcius.
Second step: 35 minutes at 175 degrees celcius. 
 
R.J Asher's Pie Making Tips:
 


Use a silicon mat for rolling your dough on. It will make it easier to pick up your dough after you have rolled it out. Silicon mats also have measurements to help you see how big you have to roll your dough to fit your dish.


Use between 4 to 6 apples or more for your pie and always use a variation. This will give your pie more texture and a range of sweet and sour flavors.


Chill your dough overnight; this will make it easier to roll.


Cut small slits on to the top of the pie before baking to let the air out. If you don't cut in the small slices, it will puff up and can explode in the oven. 


Use a glass pie dish to bake your pie as it is more durable than an aluminum pie tin.
