Craving some fall-off-the-bone ribs, sweet-and-savory pulled pork, and creamy coleslaw? Good news: a few restaurants have popped up to offer a taste of America’s southern hospitality.
 
Restoration Proclamation

One of only a handful of restos serving up Creole cuisine in Hong Kong, Restoration is a standout. With its warm hospitality, relaxing atmosphere and homey décor, this classy affair calls up all the best of the South. Don’t miss the BBQ ribs with a tomato- and molasses-based sauce: sweet, smoky and so tender they fall off the bone. Reckon you’ll be hungry for more? Head over on Wednesdays for the “All You Can Eat Ribs” special and go to town. Even if you’re elbow-deep in ribs, don’t leave without trying the pulled pork sandwich or the crispy corn bread.

Roundhouse Kick

It’s the more the merrier when it comes to barbecue—and The Roundhouse Taproom offers up a plentiful selection of pork ribs, beef short ribs, pulled pork, beef brisket, and plenty of sides. The meat here is prepped à la Central Texas, which means simple seasonings—just salt and pepper—and an oak-smoked flavor that’s both spicy and smoky. Mains and combo sets come with white bread, onion and pickles, so you make yourself a sandwich and enjoy it Texan-style. Don’t be surprised when your dish comes out dry, though; that’s so you can dip into the resto’s bbq, honey mustard, or hot sauce dressings, available on every table.

Bloomin’ BBQ

Looking for authentic southern grub in a private dining atmosphere? Magnolia checks all the boxes. At this two-level private kitchen, diners kick things off with welcome drinks by the open kitchen downstairs, before heading to the second floor private rooms, 
where you’ll tuck into generous helpings of New Orleans-style Creole and Cajun cuisines at long, family-style tables. Don’t bother asking for a menu here: every day the chef chooses the spread based on what’s freshest, but you are almost guaranteed a heaving platter of BBQ ribs. Done Cajun style, Magnolia uses its own signature “Rib Rub” before slow cooking the meats for six hours. Afterwards, the ribs are smothered in a BBQ sauce, made from a family recipe, and smattered with Cajun spices. Magnolia can host a max of 55 people ($485 per person), but be sure to reserve at least a week in advance.

Wake & Bake
Awakening Café may not offer the most traditional American tastes, but the barbecue is delicious, so who cares?  Look for the seven-hour ribs, which are cooked in a secret sauce, then glazed with a thick tomato-based BBQ sauce that has a sweet, spicy and slightly smoky flavor. For sides? Expect a fresh macaroni salad and seasonal vegetables to balance things out. And if you’re worried about finishing your plate, opt for one of the “Hong Kong” portions ($165), which is almost exactly half the size of the “American” portion ($235). Possibly accurate stereotypes aside, you’ll want to bring an appetite.

Highway to Heaven

85 South takes its name from Interstate 85, the highway which winds through the southern states. This restaurant specializes in authentic North Carolina flavors—they even source their pork from the Tar Heel State and smoke it using hickory wood. As for the ribs, 85 South uses a traditional spicy dry rub, then smokes them for crispy exteriors and moist interiors. Ribs and pulled pork are served alongside three regional Carolina BBQ sauces—the sour, spicy, vinegar-based East Sauce; the sweet, mustard-based South Sauce; and the thick, smoky, tomato-based West Sauce.

Pig Out at Home
Make your own BBQ pulled pork, with help from Restoration’s Executive Chef Jack Carson.
Pulled Pork Ingredients: 
 

BBQ Sauce Ingredients: 
Brown sugar, 300g
Ketchup, 355ml 
Red wine vinegar, 120ml
Water, 120ml 
Molasses, 120ml
Worcestershire sauce, 1 tbsp 
Dry mustard, 2.5 tbsp 
Paprika, 2 tsp
Salt, 2 tsp
Black pepper, 1.5 tsp
Hot pepper sauce, 2 dashes 
Directions:
1. Put pork into pot. Add seasoning. Fill with water.
2. Cook on low heat for 6 hours.
3. Mix sauce ingredients. Simmer for 15 min.
4. Remove pork and shred into strips with fork. 
5. Toss in BBQ sauce, and enjoy with 6-8 friends!
