Snack attack: Rempeyek

Rempeyek is an addictive snack that I first tasted when a Malaysian friend brought me a huge bag of it that had been made for her by someone in Kuala Lumpur. It was so good that on my next visit to the country, I came back with six bags of the stuff, happy to give up luggage space that would normally be reserved for clothes purchases.

Rempeyek is actually an Indonesian snack. Crisp and delicately textured (although with an assertive flavour), it's made by mixing a loose batter of rice flour and coconut milk with seasonings such as lime leaf, cumin, turmeric and garlic. The batter is fried in flat discs and, while cooking, dried anchovies and peanuts are added as a topping. The rempeyek should be very thin, although I've had commercial varieties that were thick and brittle, rather than crisp.
