The best cheese to go with white wine, red wine, Champagne and dessert wine

While we all know Bordeaux always goes well with cheddar, what if you wanted something a little more exotic?

Wine and cheese is a match made in heaven. Ronald Wu, shop manager of GDV Fine Wines, has highlighted some perfect pairings.

1. WHITE WINE
RECOMMENDED VINTAGE:
Bernard Defaix Chablis 1er Cru Cote de Lechet 2013
CHEESE PAIRING: Chaource
WHY: The soft and silky texture and the rich flavour of this cheese goes well with a mild, sourflavoured white wine.

2. BUBBLY
RECOMMENDED VINTAGE:
Maserati Prosecco DOC Extra Dry-Pure Gold Excellence NV
CHEESE PAIRING: Mascarpone
WHY: The fizzy texture of the Champagne creates a nice contrast with the smooth texture and milky taste of the cheese.

3. RED WINE
RECOMMENDED VINTAGE:
Tortochot Morey St Denis 2011
CHEESE PAIRING: Camembert de Normandie
WHY: Camembert’s soft and silky texture is full of flavour which will go great with this classy red wine.

4. DESSERT WINE
RECOMMENDED VINTAGE:
Guiraud 2001
CHEESE PAIRING: Stilton
WHY: Pair the salty Stilton with Trockenbeerenauslese (noble rot) so that a hint of sweetness from the cheese can be brought out.
