It’s all about going eco-friendly nowadays and John Anthony, at Lee Garden Three, in Causeway Bay, is fully embracing this trend by introducing an exclusive Lunar New Year menu featuring sustainably sourced ingredients.

Following its “New Year, New Choices” theme, the restaurant’s menu highlights the braised grouper fish with black garlic, dried shiitake and bamboo shoot – a farm-raised grouper from a sustainable Taiwanese farm, and the whole-braised abalone and black truffle, using abalone sourced from Aqunion, an all natural-farming and processing abalone union in South Africa.

Other dishes include the Kuruma prawn with lobster jus and Sakura shrimp, salt-baked pigeon with assorted mushrooms and the ever-traditional pea shoots with preserved and salted egg.
