Why: Chef Vicky Lau interprets love as a 9-part menu where each course is an ode to a seasonal ingredient. Highlights include a classic French meat pastry dish (‘ode to Pâté En Croute’) and egg espuma
with caviar, fermented cabbage and fresh herbs (‘ode to oyster’). The night ends on a high note with “ode to red fruit”, a dessert of crispy yogurt meringue with raspberry sorbet and osamanthus white chocolate mousse.

Why: When it comes to views, there isn’t much that can rival that of the InterContinental’s – especially when you’re dining at Rech by Alain Ducasse. For Valentine’s Day, the culinary team showcases fresh seafood flown directly from the shores of France, including succulent oysters (think Fine de Claire n°2 and Creuse spéciale n°2 oysters) which many believe to be a powerful aphrodisiac. Chocolate is also supposed to be an aphrodisiac and it’s on the menu as a dessert – passion fruit cream and chocolate mousse.

How much: HK$2,988 per couple, plus $688 per person for wine-pairing option
