This Central hot spot brings the “sun-drenched flavours of Spain and the wider Mediterranean” to Hong Kong with a new à la carte menu, along with summer cocktails and mocktails. Oceanic umami takes centre stage in the squid-ink paella with octopus and aioli – a take on arroz negro, the ink-black rice dish from Valencia. New tapas dishes, meanwhile, include the dos dias patatas (a crispy potato mille-feuille named after its two-day preparation), the classic broken-egg dish and red prawn ajillo in garlic-butter sauce.
