His philosophy is embodied in the FLAVOURS cocktail menu, where each creation is a journey. Start yours with ‘Never Goes Wrong’, a tribute to the unwavering spirit of Hong Kong. This cocktail marries salted plum gin, tangerine peel and jasmine soda with a hint of lemon, offering a refreshing and delicately floral introduction to the evening. 

For those who prefer a savoury edge, ‘Crazy! Love Apple’ delivers a bold reinterpretation of the Tomato Martini, featuring vodka, tomato, cucumber, and a finishing spray of mushroom essence that elevates its umami profile to new heights.  

Adventurous palates might gravitate towards the ‘Rainforest’s Rain’, an earthy and bittersweet twist on the Manhattan. This masterpiece combines Mackintosh Blended Malt Scotch Whisky, Ferrand Cognac and St George Absinthe, accented with Pinot Noir and Hinoki Bitters for a complex finish that lingers on the palate.  

Alternatively, the ‘Woody Bo Peep’ offers a creamy delight, blending tequila with agave and corn, topped with luscious white cocoa cream foam. It’s a dessert and a drink in one, perfect for rounding out the night on a decadent note.
