Mystery box has chefs fishing for compliments

A secret box of ingredients was all 12 teams of chefs had to create an award-winning menu and win a chance to represent Hong Kong in an international cooking contest.

The teams had only an hour yesterday to decide on a three-course dinner menu for 15 people that included every mystery ingredient: Australian lamb, Norwegian seafood, feta cheese, sun-dried tomato, mint, mango, a few other fruits and some vegetables.

'It has to make me want to eat it when I first look at it and give me lots of flavour and culinary satisfaction,' said one judge, William Boton, who is the international development chef for the Hospitality Industry Training and Development Centre.

The meals will be judged and served to guests at a gala dinner at the centre tonight in Pokfulam. The winners will get a chance to compete against 17 other countries in the Livestock Australia Black Box Gold Medal Culinary Challenge in Australia in September.

The 12 teams are Cathay Pacific Catering Services, the Hong Kong Jockey Club, Renaissance Harbour View hotel, New World Renaissance hotel, the Royal Garden hotel, the Langham hotel, Le Meridien Cyberport hotel, the Marco Polo Hongkong hotel, restaurant Finds, the Sheraton Hong Kong, the King Parrot Group and a team from the training centre.
