A MUCH CELEBRATED gourmet burger chain known for it's made-to-order sandwiches and hand-made milkshakes is expanding to open four more shops in Hong Kong by October next year. The Canadian chain is on the hunt for bright young things for its new locations, two of which are opening in Kowloon next year.

Triple O's, owned by Hong Kong's Suen family, is a franchise spin-off of the Vancouver restaurant chain White Spot. To date, the chain has 47 Triple O's outlets throughout Vancouver.

Front-house and back-house staff are needed for  the new operations. Front-house staff will  serve guests, manage the dining areas, man the tills, act as runners and operate the fountain area for the signature 'hand-dipped' milkshakes. Back-house staff will be responsible for kitchen duties.

No education in this field or experience is required, according to Daydes Fong, director of operations for Triple O's Hong Kong.

'As long as you have the right attitude everything else can be learned,' Mr Fong said.

Teaching is set up so that staff will be cross-trained and given an opportunity to work in all stations of each shop.

The main attraction of working at Triple O's is the chain's expansion plan, which also translates to faster opportunities for internal promotions. Freshmen who started at the first Hong Kong branch of Triple O's in Admiralty two years ago are now store managers.

The pay is North American-style, or hourly, and starts at $25 an hour. This is high compared with other fast food chains, which pay anywhere from $16 to $22 an hour.

Nat Bailey, who started the company in 1928, made the idea of eating in your car popular in Vancouver. Car hoppers, or servers who deliver trays of hot Triple O's meals to cars, still operate in 12 Vancouver outlets.

Although very popular on the other side of the Pacific, Mr Fong doesn't see this 1950s trend taking off here. He pointed out that Hong Kong did not  have the same car culture, and also that rents were way too high to offer such a service.

What sets the burgers at Triple O's apart is the special sauce made of mayonnaise and relish used on each burger.

'Our guests love the sauce so much they ask for extra,' Mr Fong said. 'Every time they ask for extra mayo, we write down a X+O on the ticket. The most sauce you can get is X+OOO.' Thus the Triple O's name.

The chain's two existing Hong Kong branches each employ 24 staff, and the company is looking for a similar number to staff each of its new branches.

Mr Fong said the only qualification required was that  applicants be energetic, friendly and able to participate in a team effort. Everything else can be learnt.

'I can teach you how to make a burger in five minutes,' he said.

New employees will start on dining room duties. They are required to study the menu and know items by heart. Then they move to the fountain area and work up from there.

The positions are ideal for students since Triple O's has a flexible work schedule. Candidates can apply for either part-time or full-time jobs.

'Lots of young folk  have the initiative but not the right attitude to the job,' Mr Fong said. 'They think short term and don't have  long-term objectives.

'When I first started with White Spot, I had huge goals. I wanted to be general manager of the place. Here they are so shortsighted. They make 25 bucks and then, all of a sudden, they find a job that pays $27 and they jump. But they never ask themselves, 'What am I getting out of it?''

Uniforms have been updated  since the days of the car-hopping service, with staff members no longer wearing suits with matching hats.

Clean white button-down shirts and linen  hats have replaced the old uniforms but still reflect the era in which the chain began.

Since this is the service industry and employees have daily interaction with customers, guest relation skills are essential. Most important are clear communication skills and a good command of English and Chinese.

English and Cantonese language lessons are given every week, along with management training, people-skills training and guest-focus seminars.

NEW OPENINGS

Triple O's will open another four outlets by October next year, including two new shops in Kowloon.

Around 96 employees are wanted to staff the new outlets.

Energetic, friendly and team-spirited people are required for multiple positions. No previous experience or education is needed.
