Cafe Gray Deluxe to close in Admiralty, heralding ‘new chapter’ in innovative dining, Swire Hotels says

  • Led by the late Singapore-born Swiss chef Gray Kunz, and known for its European fare that blended the tastes of East and West, Cafe Gray Deluxe opened in 2009

If you are a fan of Cafe Gray Deluxe or keep meaning to sample its modern European fare but haven’t got around to it, you are running out of time to dine there – the restaurant at The Upper House in Hong Kong’s Admiralty district will close at the end of this year.

A new concept will open in its place in the spring of 2021, Swire Hotels have announced, and promises to “mark a new chapter” in innovative dining.

The closure of the restaurant, on the 49th floor of the hotel, will come nine months after the death of the man after whom it was named and who created its menu, chef Gray Kunz, at the age of 65.

From now until December 31, Cafe Gray Deluxe presents a special menu featuring Kunz’s signature dishes, such as tarragon-scented lobster bisque, braised short rib of beef, and chilled soup of chrysanthemum and pear.

The Singaporean-born Swiss chef was known for his deft combination of Eastern and Western flavours thanks to his time in Hong Kong in the 1980s working at Plume, the French fine-dining restaurant in the then Regent hotel.

He returned to Hong Kong in 2009 to open Cafe Gray Deluxe, and in the intervening years nurtured up-and-coming chefs such as Joey Sergentakis (now based in Singapore), Chris Grare (chef and owner of Kinship and Smoke & Barrel in Hong Kong’s Central district), and Eric Räty of the two-Michelin-star Arbor, also in Central.
