Pierre has panoramic views of the city from the Mandarin Oriental’s top floor, and the décor features crystal chandeliers and comfortable armchairs. Culinary genius Pierre Gagnaire presents contemporary French dishes overseen by his protégé Jacky Tauvry. Each menu item has a long description as Gagnaire focuses on flavours and combinations of tastes. We like the signature shell, a Royale oyster David Hervé with lemon gel, ginger and cockles, razor clams, carrots, scallops and spicy bouchot mussels. The perfume of the earth features smoked roast foie gras with Jerusalem artichoke. Pierre is famous for its desserts, like tarte tatin and chocolate soufflé.
