FARE French fine dining AMBIENCE L’Atelier de Joël Robuchon’s signature interiors of sleek dark walls enhanced by signature red tones is replicated here. An open kitchen surrounded by bar seating takes the diner closer to the preparation process, shedding the formalities of fine dining. This unique ambience is part of Robuchon’s legacy. COST The discovery menufeatures all of Robuchon’s signature dishes (HK$2,180) per person. WHO TO BRING Someone special who harbours the same love for food. TURN-ONS Robuchon was known for his perfectionism. Highlights include the discovery menu first course, a sizeable disk of Imperial caviar from Sologne on a layer of spider crabmeat surrounded by a dotted circle of garnish. The quality of the caviar shines through and is well complemented by the langoustine jelly base. It’s not a meal at Robuchon without the famous mashed potatoes. The sinfully creamy spuds are covered with large slices of black truffle and served as a side with juicy pan-fried quail artfully stuffed with foie gras – indulgent, rich and incredibly delicious. TURN-OFFS The brand is known for its bar seating, making it awkward for large parties. D RINKS The restaurant boasts a wine cellar of over 20,000 bottles, so any oenophile is well catered for. We were charmed by the lychee rose Martini, a perfect balance of fragrance without being overly sweet.
