Canton Bistro features Shunde cuisine.

This Cantonese restaurant featuring Shunde cuisine is on the southside of Hong Kong Island, next door to Ocean Park. The culinary philosophy here is all about the source and sustainability of ingredients, to best protect the environment. Executive chefs Chow Fu-yup and Shunde You Jie-yi offer a variety of dim sums from childhood favourites such as steamed shrimp dumplings (HK$88) and deep-fried pork croquettes with dried shrimp (HK$63), to lavish options like steamed soup dumpling with abalone, conopy and mushrooms (HK$128).

We also tried the minced fish soup with shredded black fungus and bamboo shoots, which was flavourful and warming and is a popular Shunde dish (HK$188), honey-glazed barbecue pork (HK$168), wok-fried scallops with asparagus and XO chilli sauce (HK$398), wild-caught from Australia, which were cooked perfectly, and pan-fried beef ribs with premium soy sauce which were generous portions and, surprisingly, not oily. The scrambled fresh milk with Imperial Bird’s Nest was deliciously soft and the crab roes added an extra dimension to the flavour. All the dishes were excellent and the quality of the ingredients shone through.

Our table looked over greenery outside, and the inside decor has a Chinese contemporary setting with wooden furnishings, features such as Chinese vases and imperial teapots, and special touches such as mood lighting that create a warm and approachable ambience.
