TURN-ONS The restaurant serves Ozaki beef, a variety of Wagyu from Japan’s Miyazaki prefecture. The Ozaki farm produces only 30 cattle per month, and Marble is one of only two places in Hong Kong to enjoy it. Besides the à la carte menu and dinner and lunch sets, the restaurant offers a beef-centric omakase option.

For yakiniku, Ozaki sirloin steak, which is less fatty than most Waygu beef, is recommended for its balanced marbling. The steak is first seared on a teppanyaki grill before being sliced and charred over a charcoal flame. It’s then grilled over a hoba leaf to give it earthy flavours. The meat is served with shiso salt, pickled Thai peppercorn and fried garlic chips. It’s also worth trying Ozaki beef prepared in other ways – the signature miso-encrusted beef katsu sandwich is served with red wine-pickled shallots. The tenderloin yakisuki, prepared on the grill and finished with a sweet soy, is really delicious.

TURN-OFFS With only counter seating and a private room for parties, it is not the place to visit if all you want is a quiet night – there is plenty of banter from the kitchen team.
