Chef de cuisine of Somm at Hong Kong’s Landmark Mandarin Oriental, Terry Ho, has elevated the menu for the weekend with “Sommkind of Brunch”. Comprised of sharing platters, main courses and desserts, the wide selection of dishes is complimented by free-flow wines selected by expert sommeliers.

Start with a pastry box of Parisian brioches and double-layered pain au chocolat, or sharing starters like beef carpaccio and smoked pike roe with Alaskan king crab egg mimosas.

Showcasing neo-bistro French fare, dishes like barbecue beef short rib, bresse pigeon and foie gras pithivier, and Aveyron lamb saddle show well-constructed flavours and textures.

Finish off your luxury brunch experience with desserts like profiteroles with cacao nib ice cream, or banana pancakes slathered in a dark Okinawan sugar syrup.

Get into the Easter spirit with a new free-flow brunch set at W Hong Kong’s Kitchen, available until April 18. Kitchen presents a plethora of seafood fresh off the plane, Asian favourites and an unlimited selection of French delicacies as starters to awaken your inner foodie. The cosmopolitan cuisine extends to festive Easter egg tiramisu and a variety of durian desserts, stimulating your olfactory and gustatory senses.

From April 16-18, feast your eyes on W’s Easter afternoon tea buffet of screen saver-worthy munchables, ranging from sandwiches and canapés to fresh cooked noodles. Durian certainly steals the spotlight though, featuring in an array of durian-infused desserts including cheesecakes, crepe rolls, dorayaki and much more.

In preparation for Easter, pastry chef Maxime Frédéric and his team at the Limbar Cafe at the Cheval Blanc Paris hotel have created delectable chocolate treats to be presented at La Chocolaterie on the hotel’s ground floor.

Frédéric’s creations include an Easter egg reinvented as an edible Fabergé egg containing a merry-go-round complete with an all-chocolate mechanism to animate dark, milk and white chocolate horses. Then, taking inspiration from eggs laid at Frédéric’s family farm, half a dozen eggs in various pastel shades are given creamy praline fillings such as pistachio and buckwheat vanilla.

Other desserts, such as flans, marble cake, tartes and annéciens, have been perfumed with cocoa from exotic locations like Madagascar and Peru in further demonstration of La Chocolaterie’s imaginative use of the world of chocolate.

Ever had a dessert that was just too artistic to nibble on? Le Bristol Paris’ Easter egg is one such masterpiece. It features a sleeping Birman cat delicately crafted in milk chocolate mixed with hazelnut and toasted brown rice. It rests on a red-coloured white chocolate cushion, inside an egg shell of 70 per cent dark Venezuelan chocolate, that is lined with caramelised white chocolate for a more balanced, less bitter flavour. With the indulgent mix of this chocolate trio, the egg is an irresistible temptation as well as a sight to behold.

The Parisian hotel’s head chocolatier Johan Giachetti is also continuing to explore creative compositions of flavours and textures by offering an assorted box of 25 praline chocolates. The scrumptious selection features buckwheat, pumpkin seed, toasted brown rice and pistachio, all finished off with a luxurious coating of dark and milk chocolate.
