The Ritz-Carlton’s ‘Stellar Dining Series’ – Richard Long’s cosmic inspired melting chocolate

The Ritz-Carlton is inviting you to be its guest this month, for its first “Stellar Dining Series” that takes place across four world cities in Asia.

The dining series, which lasts until December 1, will showcase fine-dining creations from Michelin-starred chefs, mixologists and pâtissiers from the hotel’s locations in Singapore, Osaka, Hong Kong and Beijing.

The journey begins in Singapore (November 1 – 4) before moving on to Osaka (November 8 – 10), then Hong Kong (November 22 – 25) before moving on to Beijing for its final installation (November 29 – Dec 1).

In Hong Kong, chef Paul Lau of Michelin-starred Tin Lung Heen will be joined by Shintaro Miyzaki of Azure 45 from The Ritz-Carlton, Tokyo. A series of four hands collaboration lunches and dinners will showcase each chef’s forte from November 22 to 24. Highlights of the dinner include simmered grouper fillet with bird’s nest in lobster bisque by Lau, and Japanese wagyu beef fillet with eggplant and date vinegar by Miyazaki.

Another not-to-be-missed collaboration in Hong Kong includes an afternoon tea (November 23 – 24) and a chocolate master class (Nov 24), where Richard Long is joined by chocolatier Masatada Hosokawa. During the chocolate masterclass, guests can learn how to make “cosmic chocolate bonbons”.

Other highlights of the Hong Kong edition include masterclasses with head bartender Kentaro Wada from The Lounge and Bar at The Ritz-Carlton, Tokyo. A brunch at Tosca on November 25 wraps up the Hong Kong leg of the culinary tour.
