Chef Siu Hin-chi’s recommendations include braised fresh crab claw with imperial bird’s nest and caviar, abalone soup with shredded chicken and conpoy fried king prawn with water chestnut and crispy head and pan-fried Kagoshima A4 wagyu beef with scallions and shallots. Duddell’s is known for its traditional Chinese teas such as Yunnan pu-erh and Xihu pre-Qingming longjing.
